EvaPack®: Natural humidification that protects wine cellars during summer heatwaves
Seducing a date, celebrating a success, or binge-watching a Netflix hit, what better moment to open a bottle of red wine? Wine is more than a drink; it’s a living product, shaped by time, climate, and care. Whether you prefer a bold red wine, a crisp white wine, or a sparkling champagne, one thing is certain: proper wine storage is key to preserving its quality. From high-end wine cellars to wine aging rooms, controlling humidity, temperature, and light exposure ensures that every bottle reaches its full potential. In France, the land of Bordeaux, Burgundy, and Chablis, centuries of winemaking tradition meet modern challenges, especially in the face of climate change and extreme heat. So how do professionals protect their best wine collections? Discover the smart, energy-efficient technologies that are redefining the future of wine preservation.
A French solution designed for wine storage needs
Could adiabatic humidification be the ideal solution? Natural, energy-efficient, and product-friendly, it checks every box.
Developed by Devatec (Armstrong Group), the EvaPack® is an adiabatic evaporative module. It works using hygienic water evaporation to reduce the incoming air temperature while reaching the ideal humidity range for wine cellars.
This dual action is essential in viticulture:
- A stable temperature (12–14 °C / 54–57 °F) slows wine oxidation,
- Proper humidity (60–70%) prevents corks from drying and labels from peeling,
- Adiabatic humidification eliminates sudden temperature spikes and keeps air moisture-balanced.
The Krug case study: eco-designed winery meets climate performance
Among the top Champagne Houses, Krug recently unveiled a new, eco-designed wine production facility in Ambonnay, located in its historic Clos.
As reported by La Champagne de Sophie Claeys, the site integrates natural lighting, rainwater harvesting, and a free-cooling strategy to minimize energy consumption, all while preserving optimal aging conditions for its iconic champagnes.
In this context, Devatec installed several EvaPack® modules, in order to:
- Keep internal temperatures between 12–14 °C, even during extreme heat,
- Ensure consistent humidity control without electric humidifiers,
- Ensure high energy performance, with very low maintenance.
A silent and energy-efficient system designed to meet the demands of modern viticulture.
Like Krug, other prestigious houses place great emphasis on precise wine cellar climate control.
Like Krug, all the prestigious houses, such as Bollinger, Ruinart, Moët & Chandon, and Piper-Heidsieck, give great importance to humidification control. Whether in historic underground cellars or newly built facilities, humidity and temperature regulation are critical to protecting both the product and the heritage.
Whether it is to preserve the aging of wine, guarantee the integrity of corks, or maintain a constant climate in historic or recently renovated cellars, adiabatic regulation is emerging as a preferred alternative to conventional humidification systems.
Here is a brief summary of the essential criteria for the proper storage of wines and champagne:

A natural response to climate change
With hotter summers becoming the norm, thermal and humidity regulation is now a strategic priority for family-owned wineries and global Champagne brands alike. EvaPack® provides a natural, reliable, and energy-efficient solution that supports wine aging without compromising product integrity.
Consistent humidity, cool air, and reduced energy consumption, all in one French eco-engineered system, designed to meet today’s climate and sustainability standards in the global wine industry.
